NETHILI DRY FISH(BIG ANCHOVIES)

Ingredients:

  • 1 pound nethili dry fish
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon red chili powder
  • 1/4 cup chopped cilantro

Instructions:

  1. Rinse the nethili dry fish under cold water and drain.
  2. In a shallow dish, combine the salt and pepper. Dredge the nethili dry fish in the salt and pepper mixture.
  3. Heat the oil in a large skillet over medium heat. Add the nethili dry fish and cook for 2–3 minutes per side, or until golden brown and cooked through. Remove from the skillet and set aside.
  4. Add the onion to the skillet and cook for 5 minutes, or until softened. Add the garlic and ginger and cook for 1 minute more.
  5. Add the turmeric powder, coriander powder, cumin powder, and red chili powder and cook for 1 minute more, stirring constantly.
  6. Add the nethili dry fish back to the skillet and stir to combine. Cook for 1 minute more.
  7. Sprinkle with cilantro and serve hot with rice or roti.

Tips:

If you don’t have all of the spices, you can substitute with a pre-made curry powder.

You can also add other vegetables to the dish, such as potatoes, carrots, or peas.
